McCoy expanding food truck success with launch of Maza Street Kitchen & Catering

Marc McCoy, the owner of ACME Chicken Bowls, is expanding his culinary footprint in Owensboro with the launch of Maza Street Kitchen & Catering — a new venture rooted in his Lebanese heritage and a desire to bring authentic Mediterranean flavors to the local food scene.

The project includes both a food truck and a full-service catering business, aiming to offer a mix of bold street food and traditional dishes at weddings, corporate events, and private gatherings. Catering is now open for bookings beginning in February 2026, and the food truck is expected to hit the streets this spring.

“I grew up in Lebanon, and I’ve always wanted to bring the flavors I know and love to this community,” McCoy said. “Owensboro is growing more diverse, and now feels like the right time to add something truly new.”

The Maza Street Kitchen menu will include traditional dishes like shawarma, baba ganoush, hummus, tabbouleh, kafta, and falafel — all made from scratch with ingredients like parsley, mint, chickpeas, lemon juice, garlic, and olive oil. The dishes will be served with authentic Lebanese bread, baked thin and fresh at high heat.

“Lebanese food isn’t spicy — it’s savory,” McCoy said. “It’s full of flavor, balanced, and surprisingly healthy. And there are options for everyone, from dairy-free to vegan.”

McCoy said the name “Maza” (also spelled “Mezze”) refers to a style of dining with small, shareable plates meant to bring people together, a philosophy he plans to carry through both the truck and catering business.

“I want people to taste a little of everything, whether it’s a street food bowl or a full mezze spread at a wedding,” he said.

He also plans to hold a soft launch in partnership with the Owensboro Regional Farmers’ Market, with a potential pre-season tasting event in March. Ahead of that, he’s organizing a private tasting for local chefs and food lovers to provide feedback.

“This is something I’m pouring my heart into,” McCoy said. “I’ve already had people reach out wanting to know when they can try it.”

The expansion comes less than a year after McCoy debuted ACME Chicken Bowls, a fast-casual food truck offering high-protein chicken meals served over steamed rice, all prepared in under a minute. That truck, which features bold flavors like honey sriracha, drunken chicken, and sweet bourbon, will continue operating as he launches Maza.

Originally from Beirut, McCoy came to the U.S. at age 17 amid war and political unrest. He later served in the U.S. military as a linguist and translator. His first truck, launched in partnership with Louisville-based Soup Coop Foods, marked the beginning of his dream to merge food and storytelling.

“This food truck isn’t just a business; it’s a symbol of what’s possible,” McCoy said. “Now I get to honor my roots while giving Owensboro something fresh.”
